I'm Scott from Cookbyfire. I've always had a passion for cooking and love using local ingredients which has stemmed from my uncle.
I was inspired by this method of cooking after watching an episode of BBQ Chefs Table with Lennox Hastie. I quickly realised the potential for what can be achieved and fascinated how the characteristics of food change when working with fire, the most traditional form of cooking which has been around for over 2 million years.
My Dish
Local cod coated in Adnams beer batter, served with triple cooked chips with two side of homemade curry sauce and mushy peas covered with Maldon sea salt and Aspall apple cyder vinegar topped off with a dash off lemon all cooked over a live wood fired pit.
